I am extremely proud of this cocktail. First of all…..look at it! Secondly, this was the first time I entered a cocktail competition and I WON. Lillet is an appertif wine that can be sipped straight, with a splash of flavored soda or in a fancy cocktail. Extremely versitile and the bottle is also pretty.
The competition required entries to be centered about how contestants brunch. I OBVIOUSLY had to incorporate champagne into the mix, because duh. Prickly pear is a tart, but sweet component that pairs really well with the Lillet. NOTE: You’ll often find prickly pear syrups labeled as “Desert Pear”.
Definitely give this one a try for your next brunch, happy hour or even game night. Super quick drink that tastes amazing. I also provided notes on how to make this as a mocktail below!
LET’S CREATE MAGIC!
- 4 oz Lillet Blanc*
- 1 oz Prickly Pear syrup
- 1 oz Lime juice
- Champagne or Prosecco*
Pour prickly pear syrup, Lillet Blanc and lime just into a wine or spritz glass. Give it a gentle stir to combine the ingredients. Add ice. Top with champagne or prosecco.
*Sub with sparkling cider and soda water to make this a mocktail!
